Abstract In this study the suitability of different yeast strains of the genus kluyveromyces and of the genus saccharomyces for alcohol production from different substrates was determined . Conditions for the optimization of the fermentation parameters were established for the selected yeasts. Whey permeate, sugar beet molasses , and fodder beet juice were used as substrates for the fermentation of ethyl alcohol . two strains of the genue kluyveromyces and six strains of the genus saccharomyces were used. strain of saccharomyces cerevisiae and saccharomyces diastaticus are unable to metabolize lactose for ethanol production.
