المستخلص The present herein study was conducted to maximize the recovere of rennin enzyme from different forms of calf vells .Suitability of different solutions to recover rennin from fresh, frozen and dried vells was done and improving such extraction was also carried out.Taking in consideration the importance of clarification of liquid rennets extracts in their stability during storage, the stude concerned with applying chemical clarification and following the changes in liquid rennets during storage under different conditions. |
