Abstract Seventy five random samples’ c , large scale (25 each of plain and fruit yoghurt) and 25 small scale yoghurt samples were collected from different dairy shops and markets in Zagazig City, Egypt to be examined for sanitary and quality tests. The obtained results revealed that the highest’ frequency distribution of examined yoghurt samples based on suggested score for organoleptic examination (68%) of examined large scale plain yoghurt samples lies within the range of 93-100%(no defect), while (44%) of examined large scale fruit within the same range and (40%) of examined small scale plain yoghurt lies within the range of 67-73%(pronounced defect). ItOs evident from the obtained results that the mean acidity% in large scale plain and fruit yoghurt samples was 1.04% and 1.22% respectively, while in case of small scale yoghurts was 1.19%. The obtained results revealed that the mean coliform countlg in examined yoghurt samples was1.16x104, 1.1x1Q4, 8.9x105/ gm for large scale plain and fruit and small scale ones respectively.
