Abstract One hundred random samples of raw cow’s milk were collected from different markets and shops in zagazig city, Sharkia Governorate, Egypt. A survey was conducted to determine the hygienic quality of examined raw cow’s milk samples by applying the keeping quality tests and bacteriological examination. It’s evident from the obtained results that the mean value of acidity% in examined raw cow’s milk samples was 0.13±0.001. By good inspection of discussed result, it cleared that the mean value of pH in examined raw cow’s milk samples was 6.81±0.02. The mean total bacterial counts/ml of examined raw cow’s milk samples was1.67×108 ±3.63×107 cfu/ml. The obtained results revealed that the prevalence of coliforms contamination was 70.0%, while the mean coliform count/ml (MPN/ml) in examined raw cow’s milk was 2.90×105±1.06×105 cfu/ml. Citrobacter amalonaticus, Citro. diversus, Citro. freundii, Enterobacter aerogenes, Entero. agglomerans, Entero. cloacae, Entero. gergoviae, Klebsiella oxytoca, Kl. pneumonia subspecies pneumonia and E. coli could be isolated at varying percentages ranged from 4% to 10%. |
