Abstract According to our work in this thesis we found that; we can preserve food naturally, increase its shelf life and avoiding food borne diseases and outbreaks, without using any dangerous artificial preservation ways which threaten human life, by using new natural preservation system consisting of Allyl isothiocyanate (AITC) as natural antimicrobial compound found in mustard essential oil and using brown seaweed de oiled Laminaria japonica powder which act as edible natural carrier for AITC. The advantages of this preservative food system are: 1- 100% naturally, so no side effects on human health or environment. 2- Cheap and economically compared to other food preservation ways. 3- Available and easy to obtain it by food factories. |
