Objectives : The purpose of the research is a possibility of manufacture of soft drinks from dates by using the molasses as an alternative to sugar and fructose in soft drink , Methodes & Resultes : Scientific and practical methods were carried out on dates and soft drink and their components ,from CO2 and fructose citric acid , ascorbic acid their sources and glass and their sources ,types with methods of extraction of molasses from dates and filtration and concentration and prepare the soft drink and conduct of physical and chemical analysis ,know the most important results that have appeared to us and their composition in tables to facilitied the research and comparison , discussion to contain a good results to this research . Concluion : from the data viewed in this research there is a good possibility to produce carbonated soft drinks from dates. Was founded that the dates used in this research contained sweetness in a high level (about 77.6%).
