Abstract The current study was carried out in a trial to maximize the healthcare benefits of fenugreek seedlings. To achieve this goal, salt stress was postulated to have the capability of enhancing the nutritional and medicinal value of fenugreek seedlings as a simple, low cost and low risk technique. The results revealed that applying 150 mM NaCl from the beginning of germination till the seedlings become 5- day old caused germinated fenugreek to have higher moisture, protein, vitamin and mineral content with corresponding lower sugar content. Also, fenugreek seedlings salinized in such a way possessed enhanced antioxidant and antimicrobial activity; along with increased content of some medically- active phenolics as well as other beneficial secondary metabolites. from another point of view, fenugreek seedlings could physiologically cope with the applied afore-mentioned dose of salinity as indicated from its germination parameters, seedlings growth vigor, cellular membrane features, osmotic regulatory system and enzymatic antioxidants. |
