Abstract

A grand total of 100 random samples of four types of imported frozen boneless raw meat (American , Brazillian , Indian and Sudanese) (25 of each) were collected from different shops and super markets at Cairo governorate. The collected samples were kept in a separate plastic bags and transferred directly to the laboratory in an insulated ice box under complete aseptic conditions without undue delay to evaluate their bacteriological quality.
Aerobic plate count in imported frozen meat
Aerobic plate count (cfu/g) ranged from 2.3x104 to 3.9x106 with a mean value of 7.25x105 ± 2.38x105 for American frozen meat, 2.3x104 to 8.3x106 with a mean value of 1.53x106 ± 4.84x105 for Brazillian frozen meat, 2.1x104 to 6.6x106 with a mean value of 1.54x106±4.14x105 for Indian frozen meat and 4.3x104 to 8.3x106 with a mean value of
2.35x106±5.59x105 for Sudanese frozen meat.
According to the safe permissible limit stipulated by EOS (2005) for APC in frozen meat (not exceed 106 cfu/g),it was indicated that some analyzed samples of frozen meat weren’t in accordance with this limit.
Total psychrotrophic bacterial count in imported frozen meat:
Total psychrotrophic bacterial count (cfu/g) in the analyzed samples ranged from 3.1x104 to 5.9x106 with a mean value of 1.02x106 ±
3.64x105 for American frozen meat, 3.4x104 to 4.7x106 with a mean value
of 1.42x106 ± 3.57x105 for Brazilian frozen meat, 2 .9x104 to 5.1x106 with a mean value of 1.50x106±3.17x105 for Indian frozen meat and 4.x103 to
8.1x106 with a mean value of 2.42x106± 4.86x105 for Sudanese frozen
meat samples.
Respectively, some of the examined samples of imported frozen
meat were not accepted based on their psychrotrophic bacterial count according to EOS (2005) which stated that the maximum permissible limit for psychrotrophic bacterial count in imported frozen meat should not exceed 106 (cfu/g).
Isolation and identification of Aeromonas:
The incidence of Aeromonas species in examined frozen meat where A. hydrophila present in 5( 20%), 7(28%), 10 ( 40%) and 8( 32%) of American, Brazilian, Indian and Sudanese meat respectively while A. Slmonicida present in 3(12%),6( 24%), 5( 20%) and 5(20%) in the same samples respectively. On the other hand, A. punctata were present in
2(8%), 4(16%), 2(8%) and 3(12%) of the examined samples respectively. A.sorbia also present in 2(8%), 5( 20%), 1( 4%) and 2 (8%) of the same samples respectively finally A. cavia was present in 2 (8%), 4(16%),
1(4%) and 1(4%) of the examined samples respectively. A.hydrophila was the most predominant strain isolated and identified from all examined imported frozen meat samples followed by A. salmoncida and A. punctate.
Isolation and identification of Pseudomonas:
The incidence of Pseudomonas species in examined frozen meat were Ps. fluorescence was isolated from 6 (24%), 13( 52%), 11( 44%) and 8 (32%) of the analyzed American, Brazillian, Indian and Sudanese frozen meat samples, respectively. While, Ps.alcaligenes was isolated from 5 (20%), 7(28%), 6( 24%) and7( 28%) of the examined frozen meat samples respectively. However, Ps.putrefaciens was identified in 3(12%),
5(20%), 4(16%), 4(16%) of frozen meat, respectively. Meanwhile, Ps.vesicularis was detected in 3(12%), 6( 24%), 5( 20%) and 2(8%) of samples of frozen meat, respectively. Moreover, Ps.diminuta could be identified in 2(8%),4( 16%) ,6( 24%) and 2( 8%) from frozen meat
samples respectively.
from the previous obtained results Ps. fluorescence and
Ps.alcaligenes represented the major species which could be isolated.
Total Staphylococcal count in imported frozen meat:
Total Staphylococcal count (cfu/g) in the examined samples were with a mean value of 2.41x103 ± 2.07x103, 1.50x104 ± 4.70x103,
1.87x104±2.94x103 and 2.62x104± 5.66x103 for American , Brazilian ,
Indian , Sudanese frozen meat respectively.
Staphylococcal aureus count in imported frozen meat:
Staphylococcal aureus count (cfu/g) in the examined samples were with a mean value of 8.98x102 ± 8.39x102, 7.47x103 ± 3.79x103 for,
3.27x103±1.43x103 and 7.57x103± 2.34x103 for American , Brazilian ,
Indian, Sudanese frozen meat respectively.
Incidence of Gram positive cocci:
Table (10) declare Incidence of Gram positive cocci isolated from the examined frozen meat samples S. aureus were present in 8 (32 %),12 (48 %),10( 40%) and 9(36%) of American, Brazilian, Indian and Sudanese frozen meat respectively. S.epidermis were present in 2 (8
%),1 (4 %) and 1( 4 %) of Brazilian, Indian and Sudanese frozen meat respectively.
S.intemedius were present in 1 (4 %) and 1 ( 4 %) of Brazilian and Indian frozen meat respectively. S. saprophyticus were present in 1 (4%) and 1 (4 %) of American and Brazilian frozen meat respectively.
S. capitis were present in 1 (4 %) of Brazilian frozen meat samples. Microccus species were present in 1 (4 %) and 2 (8 %) of American and Brazilian frozen meat respectively.
