Abstract Mycotoxins, which are secondary metabolites of toxigenic fungi, are unavoidable contaminants in foods and feeds. Mycotoxins residues in food of animal origin may pose a threat to humans through their carcinogenic, teratogenic, immunosuppressive, and other adverse effects. The most important mycotoxins in naturally tainted foods and feeds are aflatoxins, ochratoxins, zearalenone, T-2 toxin, deoxynivalenol, and fumonisins. Aflatoxin (AF), a class of mycotoxins produced by fungal species of the genus Aspergillus (flavus and parasiticus). Aflatoxin B1 is associated with both toxicity and carcinogenicity in the human and animal populations. Aflatoxin-related disorders in humans are referred to as aflatoxicosis. Acute aflatoxi-cosis is caused by acute exposure to aflatoxin and manifests as severe, acute hepatotoxicity with a 25% case fatality rate (10). Persistent aflatoxicosis has been widely established as a result of chronic aflatoxin exposure, usually in conjunction with hepatitis B virus (HBV) or other risk factors. (12) 1. The present study aimed to: 1- To measure Aflatoxin B1 levels in chicken eggs and liver at different Alexandria markets. 2- To compare the Aflatoxins B1 levels in chicken liver and eggs from different Alex-andria markets. 2. This study included: Ninety-six egg samples, eighteen divided equally to white and brown collected equally from each district (12 from hen sellers and 7 from supermarkets). Seventy-eight liver samples, fifteen collected equally from each district (13 from hen sellers and 2 from supermarkets). 3. The result of this study showed that : 1- Sixity four of the egg samples had unacceptable levels of AFTB1 33.00and thirty-three of the egg samples had acceptable levels of AFB1 according to the allowed for food and animal feed in European commission regulation 2002 that set maxi-mum tolerable limits for AFB1 is 5µg/kg. 2- Seventy percent of liver samples had unacceptable levels of AFB1 and twenty-three percent of the liver had sampled acceptable levels of AFB1 according to European commission regulation 2002 that set maximum tolerable limits for AFB1 is 5µg/kg. 4. It was concluded from the result that. 1- High percentage of chicken eggs in Alexandria markets is contaminated with AFB1 more than 5µg/kg. 2- High percentage of chicken liver in Alexandria markets are contaminated with AFB1 more than 5µ. Recommendations:- The high percentage of an unacceptable level of Aflatoxin B1 in eggs and liver in the pre-sent work highlighted the importance of 1-Monotring Alex markets regularly to measure the improvement in the acceptable level of Aflatoxin B1 in eggs and liver. 2- To study the effect of measures aiming to lower such levels as a good choice of chicken feeds, improving sanitary measures in abattoirs, and chilling conditions. |
