Abstract This work has been carried out to characterize the metal complexes prepared between metal ions and mannan polysaccharide extracted from from saccharomyces cerevisiae. The complexes had variety of potential applications. We studied the effect of the zinc(II) complex on cane molasses fermentation efficiency and the effect of the iron (III) complex on improvement of yeast production effeciency from cane molasses. Also the yeast produced which is enriched by iron is concidered a solution to anemia diseasion for medical application.
