Abstract The present study was carried out on 100 random samples of rabbit meat (25 each of rabbit thigh, rabbit breast, rabbit liver and rabbit kideny) collected from different butcher shops and markets at Sharkia Governorate, Egypt, at different levels of sanitations and the collected samples were examined for assessment of the hazards of rabbit meat and offals according to their bacteriological profile. The recorded results indicated that mean values of APC (log10 CFU/g) 5.63 ± 0.14 in breast, 5.64 ± 0.18 in thigh, 5.14 ± 0.15 in liver and 5.38 ± 0.15 in kidney. Total Coliforms (log10 CFU/g) were 2.38 ± 0.13 in breast, 2.46 ± 0.14 in thigh, 2.73 ± 0.14 in liver and 2.31 ± 0.12 in kidney. And prevalence rates were 88% in breast, 92% in thigh, 88% in liver and 84%in kidney. |
