It is ،،one of the grains of the 21st century” due to the optimum balance of nutritional, and has a relatively high protein content (13.8% –16.5%) and a great amino acid profile. Carob (Ceratonia siliqua L.) is an evergreen tree. It belongs to the Leguminosae (Fabaceae) family. It offers essential nutrients, including carbohydrates (especially glucose, fructose, and sucrose), dietary fiber, fat, and significant amounts of phenolic compounds (gallic acid, tannins). Sesame (Sesamum indicum L.) is a worldwide cultivated oil crop that belongs to the family Pedaliaceae. It possesses high nutritional value, enriching fats, proteins, carbohydrates, lignans, vitamins and minerals. It contains 21.9% protein and 61.7% fat, 13.5% carbohydrates, and 5% ash. Malnutrition represents a major global public health burden.
