Abstract

The experiment was conducted in 2022-2023 at the private wheat milling line (Al-Massa Mills Company) in Sadat City, Menoufia Governorate. The aim of this researsh was study the effect of different mixing ratios of Russian and Ukrainian wheat and feeding rates on the performance of the wheat milling line. Three wheat varieties were used (Russian wheat 12.5% protein - Russian 11.5% protein - Ukrainian 11.5% protein). Mixing wheat during milling operations is considered one of the actions taken to improve the specifications of flour. Wheat types mixed upon receipt and before the cleaning and tempering process, where impurities were removed and moisture levels adjusted. Adjusting the wheat milling production line is also adopted to obtain the highest extraction rate. For flour with the lowest percentage of ash through the stages of wheat grinding (reception stage - cleaning stage - tempering stage - grinding stage). The grinding stage is divided into three basic processes: Breaking, where the wheat grains are broken and the largest amount of endosperm grains is extracted, and Sizing. where the size of the endosperm grains is reduced, producing grains of similar sizes and smoothing (Reduction). Softening rates are determined routinely due to the changes that occur as a result of mixing wheat, and the factors under study were using three types of wheat (Russian wheat 12.5% protein - Russian 11.5% protein - Ukrainian 11.5% protein). The results showed that when using mixing ratios (70% Russian 12.5% + 30% Ukrainian 11.5%), the best feed rate for cleaning line was 12 tons/hour, and the efficiency of the first cleaning line 99.74%. When the cleanliness of the raw wheat before the first cleaning process was 97.83%, also the second cleaning line after the tempering process before milling was 99.96%. the best feed rate for milling line was 11.3 ton/hour, The results of the analyzes of the wheat flour produced showed that the moisture contant was 14.1%, the ash percentage was 0.56%, the protein percentage of 10.7 %, the percentage of starch damage was 5.5 %, the percentage of wet gluten 25.9 %, absorption percentage 59.2%, the color percentage L* was 89.5%, The extraction rate was 75.6%, and it was stable. the best feed rate for first and second cleaning line was 14 ton/hour and for milling line 11.3 ton/hour for low total specific energy consumption was 0.0126, 0.0036 and 0.2861 MJ/Kg respectively. Also The results mixing ratios (60% Russian 12.5% + 40% Russian 11.5%) showed that almost the same results to the mixture (70% Russian 12.5% + 30% Ukrainian 11.5%).
